Since it’s too hot out to make anything inside the house… Not eating anything just yet but say around noon-ish… I’ll be having a rotisserie lemon pepper herb chicken with red beans and rice along with a garden salad. It’ll be dinner too

I taught myself to cook last year just by watching YouTube videos and then trying shit on my own. I’m an absolute master of meatloaf now, but have made a lot of dishes. My Shepherd’s Pie was World class too.
Well meatloafers…diner food , soul food, both my specials.
Soul food is easy to master but diner food GOOD diner food is all about knowing all the tricks, ive cooked with many moms and pops owned diners and those secrets are precious to learn and know.
All that being said i will give up one meatloaf secret.
The binder or filler most use is bread or bread crumbs or some type of bread/crackers the secret diner method is oats.
Also always remember 1 egg per pound.
I have dozons of diner secrets all memorized.
Ok 1 more , chocolate is a must do for chili.
Oh and that brown gravy that you love so much, 9/10 times its usually trio.
I made some really awesome gravy a few times using beef stock, mushrooms, wine, onions, a bit of starch. But yeah, recently I was in a rush and just used some packets. It was actually still really good, and a lot more efficient.
Being a Detroit native, I can say that looks good. I’ll take a corner piece.
If I may suggest a just a smidge more sauce.

I just spent the wknd in the Keys and had the best conch fritters of my life…been down there hundreds of times and had more conch fritters than I can count but this place we found had the best…also had some Ahi Tuna and Avocado egg rolls that were stupid good
…shrimp, yellowtail,mahi mahi and all kinds of other shit…home of some of the best seafood in the country it never disappoints…
I was having fun cooking meals for me and my wife, but I kind of hit a wall with thinking of what to make and getting to the store to get ingredients, so I just signed up for one of those meal delivery things. Some colleagues recommended Hello Fresh, so I’m gonna give it a try. First box comes next week…
